- 1 pack Old El Paso™ Tortilla Pockets™
- 4 tablespoons Old El Paso™ Thick 'N Chunky Salsa
- 1 tablespoon olive oil
- 100g pancetta slices or streaky bacon rashers, halved width ways
- 250g pork sausages, cut into pieces
- 750g new potatoes, cut into small chunks
- 100g baby spinach leaves
- 2 tablespoons freshly chopped chives
- 4 tablespoons soured cream
Preparation
- Heat the oil in a large frying pan over a medium heat and cook the pancetta for 3-4 minutes or until golden. Remove with a slotted spoon and drain on kitchen paper. Add the sausages and potatoes to the pan and cook in the oil for 15-20 minutes, stirring occasionally, until golden and tender. Return the pancetta to the pan with the spinach and continue to cook for 2-3 minutes until the spinach has just wilted. Stir in the chives. Season to taste.
- Heat the pockets to pack instructions.
- Serve warmed pockets with the hash, soured cream and salsa in separate bowls and let everyone fill their own pockets their own way.
Expert Tips
- Give it a Spanish twist by using chorizo sausage and swapping chives for parsley.
- To save time, why not use already boiled potatoes or boil your own the night before. Cook the sausages for 5-6 minutes, then stir in the cooked potatoes and cook for a further 5-6 minutes until golden.
- Make the filling ahead of time and simply reheat and stuff the pockets in the morning when ready for breakfast. Reheat in the microwave on high in 1 minute bursts until piping hot or reheat in a frying pan over a medium-high heat for 8-10 minutes until piping hot.

- Butter, for spreading
- 1 Old El Paso™ Flour Wrap
- 1 ½ slices of Emmental cheese
- 1 slice of ham
- Fresh chives, finely chopped, for sprinkling on top
- Simple salad for serving (rocket, tomatoes, balsamic & oil dressing)
Preparation
- Spread a layer of butter directly onto the wrap before building.
- Place the cheese and the slices of ham in the centre of the wrap. Fold the bottom edge up a little then the sides in to form a pocket. Cook in a frying pan on medium heat for 20-30 seconds on each side (or until the cheese is melted and wrap toasted).
- Cut in half and sprinkle over the chives.
- Serve with a side salad.

Slow-Cooker Turkey, Bacon & Avocado Wraps

- 4 slices bacon, cut into 1 cm to 2 cm pieces
- 1 kg turkey breast mini fillets, thickly sliced
- 175 g barbecue sauce
- 2 tablespoons Old El Paso™ Garlic & Paprika Seasoning Mix for Tacos
- 1 medium ripe avocado, stone removed, peeled and mashed
- 2 little gem lettuces, sliced
- 125 g drained roasted red or yellow peppers, chopped
- 8 Old El Paso™ Super Soft Regular Flour Tortillas, warmed through
Preparation
- In a large non-stick frying pan, cook the bacon over medium heat for 5 minutes, stirring occasionally, until almost crisp. Add the turkey and continue to cook for 5 minutes, stirring occasionally, until turkey is brown on all sides.
- Mist a slow cooker with cooking spray and add the turkey mixture. Top with the barbecue sauce and taco seasoning mix then stir to combine. Cover with a lid and cook on low heat setting for 5 to 6 hours.
- Remove the turkey from the cooker and place onto a chopping board. Use 2 forks to shred the turkey then return the turkey to the cooker and mix together with the bacon and sauce.
- Spoon the avocado, lettuce, turkey mixture and peppers onto the tortillas and roll up to serve.
Expert Tips
- To warm tortillas, wrap them in foil and heat in the oven at 170 ºC (150 ºC for fan assisted ovens), gas mark 3 for 7 minutes. Or wrap them in greaseproof paper, place into the microwave and cook on High for 45 to 60 seconds.
